So much is new, where do we start? Taking over a broken business is terribly overwhelming. But we came up with the strategy of pick something broken and fix it completely, then pick the next thing broken and fix that completely. So far the approach seems to work. There were so many small things that added up to make a big difference, but what most likely matters to you are the big things.
The first thing we needed to do was to make the atmosphere warm, light and inviting. So we got to it, repainting the entire upstairs. The big grey scale strips made the upstairs dining area feel much bigger and lighter compared to the nasty dark brown. We ditched the old menu and came up with some great bagel sandwiches for breakfast and lunch. The breakfast burrito became a morning hit.
Some things you just can’t change, so we kept Stumptown as our roaster. But we added more roasts. Hairbender is a wonderful espresso blend, but today we have Indonesian Sumatra, Costa Rican Los Santos, Guatemalan el Bourbon, Holler Mountain, Ethiopian and more. We added the Hario V-60 pour over system, French Press and a Siphon Brewer so you can enjoy the finest coffee roasts by your favorite brewing method. You can also get any roast you love by the bag. We’ll even grind it for you!
No one wants to get tea-bagged so we ditched those and went to Townshend’s Tea for worldly tea fare, brewed properly. Yerba Matte, Gunpowder, Silver Tip Jasmine and more than ten other flavors to meet your fancy.
On the pastry side, we got rid of the expensive hoity-toity stuff and went to a Cookie Monkey for lemon and poppy seed loves, 7 layer bars, as well as, bran, blueberry and carrot cake muffins. And for those of you that are vegan and/or gluten free we proudly serve Gem pastries that include power bars, cookies, brownies and more.
