This week, United States House Representative Alexandria Ocasio-Cortez announced her intent to go vegetarian for Lent, a Catholic holiday that is observed from February 17 until April 3 this year. A few weeks ago I told @RepRaskin that this year I wanted to adopt a vegetarian diet for Lent in memory of his son Tommy. Jamie said, “Well you’d have to do   Read More

North Texas is thawing, but hunger remains as grocery stores and food banks struggle to meet demand

Alicia Marquin tried to save as much food from her refrigerator as she could this week as temperatures dropped and snow accumulated outside her West Dallas home. Sandwich meat was fed to her husband and 82-year-old father. She put food on the verge of spoiling out into the snow to stay cold until wild animals claimed it. Without power for two days and snowed in for two more, the 52-year-old ventured onto roads of melting ice on Friday only to find grocery store shelves bare. “No bread, no milk, nothing,” Marquin said. Gregory Gourdet Works to Build a Better Restaurant in Portland

As Mr. Gourdet sat in the kitchen of Kann Winter Village last month, a side door was open to the outdoor “village” of 10 yurts, provided by American Express as part of a nationwide program. Tia Vanich, the project’s director of operations and Mr. Gourdet’s business partner, was helping refresh the tents before the next service. In January, indoor dining was still banned in Portland. (Those restrictions were lifted early this month.) “Without the yurts, we’re not in business,” Ms. Vanich said. Mr. Gourdet’s attempt to create a more inclusive and harmonious work environment is most evident in Kann’s   Read More

A guide to thickeners: cornstarch, tapioca, arrowroot, potato starch and flour

As Harold McGee explains in “On Food and Cooking,” starches are made of long chains of glucose sugar molecules that are linked to each other. Starches are useful in thickening because of the way they behave in the presence of hot water. He summarizes the process in “Keys to Good Cooking”: “When heated in a liquid, starch granules soak up water, swell, and release long, tangly starch molecules, all factors that cause the liquid to thicken.” McGee says that cooking for an extended period, bringing the mixture to a boil or vigorous stirring will eventually thin out the mixture, which   Read More

Appetite for change: better options for those with dietary restrictions

I am grateful to be on campus this semester, and grateful for all of the work the dining hall staff has done. They are working really hard to make on-campus dining possible and safe for us this semester, and I have always found them to be incredibly pleasant. That being said, I love to eat, and this semester, the dining options haven’t been particularly good. I am not a particularly picky eater, but I have been vegetarian for my whole life and plan to keep being vegetarian while at Princeton. Many others are in the same situation. For vegetarians, the   Read More
