Keep it simple, cheap and healthy with beans — and these recipes

When I was younger, I never appreciated how lucky I was to spend time with many of my great-grandparents. One of them stands out. Even in his old age, my great-grandfather Edwin was a bundle of energy. He was healthier than average and lived to be 99.  I remember how much he aggravated my grandmother, because, just like most people, he wanted to maintain control of his life even as he aged and needed some help. Edwin was no longer driving and my grandmother was buying his groceries. But he insisted on going to the grocery store with her so   Read More

Health Benefits of Legumes – The Healthiest Beans for Your Diet

“Beans, beans, the magical fruit … “ Yeah, yeah, yeah—we’ve all heard this little ditty (which has certainly stood the test of time since my kids now sing it themselves). As a registered dietitian I know that beans deserve more respect—and should notbe relegated as the butt of jokes. Yes, beans give you gas—but they do so much more for you health-wise. And, while we’re rectifying the reputation of beans, let’s get something else straight: The overall category of beans is actually called “pulses.” Though the words pulses and beans are used interchangeably, they do have distinct meaning. Nonprofit physicians group supports ‘beans over beef’ in Nebraska | Food and Cooking

The Physicians Committee for Responsible Medicine, a nonprofit, has worked through 12,000 doctors and other health practitioners nationwide to emphasize prevention of chronic diseases such as diabetes, heart disease, obesity and cancer with plant-based diets. It also has worked 35 years to search for alternatives to the use of animals in medical education and research and for more effective scientific methods. Its research views prompted criticism in the 1990s from the American Medical Association, although the committee’s leader, Dr. Neal Barnard, has said those disagreements with the AMA are in the past. Cities outside Lincoln and Omaha can enact mask   Read More

Nigel Slater’s recipes for peppers with crab and tarragon, and mushrooms and green beans | Food

I can’t see a pile of peppers without thinking of them roasted, their silky, scarlet flesh surrounded by their own caramel-coloured juices. It is a recipe I do without thinking – the long, thin peppers are left whole, snuggled in a roasting tin, their skin glossy with olive oil. They are roasted till they puff up, letting out a sigh as they collapse and their juice pools in the bottom of the tin. They make their own dressing, with a smoky sweetness from the peppers, a hint of bitterness from the charred skin. We eat them this way, with basil   Read More

The Vegan Dessert Market Continues To Grow. It wasn’t too long ago that sweet treats were a hard-to-come-by rarity for vegans. If you were a plant-based eater with a sweet tooth, chances are, you either baked your own sweets or stuck to sorbet and fruity popsicles on a regular basis. Premade vegan cakes, cookies, and ice cream were something you might travel to a specialty store or restaurant for, but they weren’t available in regular   Read More

Keep the green in summer beans | Food and Cooking

For “company batches” of French-cut beans, I pull out my little hand-crank French bean slicer. It’s a slick kitchen tool that attaches to a counter top. To operate it, you feed a handful of fresh green beans into the hopper while turning the crank. Beans are sliced into slender French-cut slices in short order. I found mine at a local kitchen ware store years ago, but you might not have such luck. However, it’s also available via the internet. Made by NorPro, (NorPro Deluxe Bean Frencher with clamp) it costs about $29. Norpro also sells a hand-held bean slicer like   Read More
