From irresistible nibbles to decadent desserts: our best recipes for Christmas Day | Food

A decadent starter – and a godsend for cooks who like to get ahead. Photograph: Louise Hagger/The Guardian. A set of festive snacks: caraway, spelt and parmesan grissini with aleppo chilli, to dip in a three-cheese mix with spiced date syrup and pine nuts, and a posh, sake-cured salmon with sesame sprinkles and pickles. Two light first courses to offset the big feast to come – a bright prawn, fennel and celery salad, and a ricotta and spinach bake that’s somewhere between a soufflé and a frittata. Yotam Ottolenghi’s recipes for Christmas snacks and nibbles | Food

There’s only one month to go now, until lots of us get around lots of tables to share lots of food. My plan this Christmas is to make up for how little travel has been possible with a feast of flavours from around the globe: Italian parmesan, Japanese sake, African cassava, Greek feta, Middle Eastern date syrup, French brie and a Creole turkey, all bringing into question the whole notion of there being just one “traditional” way of doing things. The chairs around the table will be equally various and many, and the toasts will be to the whole

New Christmas Tree Disposal Method? Eat It

The Christmas celebration inevitably gives way to the post-Christmas cleanup, replete with such less-than-merry tasks as taking down the decorations, putting away the good china and, of course, getting rid of the tree. Julia Georgallis, a 32-year-old, London-based industrial designer-turned-trained baker, is calling upon holiday revelers to consider an alternative —at least when it comes to that last step. Her suggestion: using a Christmas tree, particularly its ever-fragrant needles, to make Christmas tree pickles. Or Christmas tree hot-smoked fish. Or perhaps best of all, Christmas tree ice cream. “For some reason, when you mix Christmas trees with dairy,

Meera Sodha’s vegan recipe for root vegetable pachadi | Christmas food and drink

Pachadi, a south Indian dish, has become my answer to many a lone vegetable lying at the bottom of the fridge. It is my Indian “bubble and squeak”. Although there are no mashed potatoes here, there are plenty of leftover Christmas root vegetables, which have been given a big, bold flavour makeover using mustard seeds, ginger and chillies, before being doused in coconut yoghurt. It is belly-warming but fresh, enlivening but also comforting, and exactly what I want after eating far too much, as always, on Christmas Day. Root vegetable and sprout pachadi Julienning or grating 600g vegetables will

Tom Hunt’s Christmas recipe for leftover turkey pilaf | Christmas food and drink

It’s estimated by the government waste scheme Wrap that we waste two million turkeys each Christmas. Most of that is likely to be meat left on the carcasses, which, if repurposed, could easily be used in all manner of lazy meals and snacks – perfect reserves to get us through the post-Christmas slump, after all that hard graft, hosting and booze. In my household, turkey pilaf is our go-to, after-Christmas dish. It works well with just a few morsels of meat, especially when you use the bones to make a flavourful stock to cook the rice in, and when

Yotam Ottolenghi’s Boxing Day recipes for using up Christmas leftovers | Food

The thing about Christmas day, as no one’s stomach needs reminding, is that there is always so much food. It is, however, a truth universally acknowledged that the whole point of cooking a great big bird – not to mention enough vegetables to feed twice as many people as are actually eating them – is to be able to enjoy the leftovers the day after. For all the ceremony, and the focus on the food served at the right time in the right place at the right temperature on Christmas Day, does anything, truly, beat the likes of a

Miami Heat in giving mood for Christmas, holiday season

As one of the 10 NBA teams playing on Christmas Day, the Miami Heat spent a chunk of the holiday working. But Heat players and coaches spent the days and weeks leading up to Friday’s Christmas Day home opener against the New Orleans Pelicans giving back. Coach Erik Spoelstra was among the many members of the organization who used the holiday season to give to their communities and charities of choice amid the COVID-19 pandemic. For the past five weeks leading up to Christmas, Spoelstra and his family partnered with local small businesses to host gift card giveaways while matching

A look at 7 traditional Christmas feasts from 7 different countries | Food and Cooking

Many Costa Ricans celebrate Christmas with a middle-of-the-night extravaganza, says Leo Ghitis, owner of Nayara Hotels, in the country’s northern highlands. “We go to midnight Mass and come home and have a huge meal at 2 a.m.,” he says. Homemade tamales, filled with either chicken or pork or vegetables and cheese, kick off the spread. Then it’s onto arroz con pollo, Costa Rica’s national rice dish that’s made with green beans, peas, carrots, saffron, cilantro and a chopped up whole chicken. Homemade tamales are a staple in Costa Rica. Shutterstock The third course is an assortment of grilled proteins. Costa
