Storage. Leftover dip should be stored in an airtight container in the refrigerator for up to 3 to 4 days. I do not recommending freezing the dip as it will alter the texture.

Make Ahead. This dip can be made a day in advance and stored in an airtight container in the refrigerator until ready to serve.

Variations To Try

  • Turn this tasty dip into a cheesy corn dip with the addition of shredded mozzarella, Pepper Jack, Parmesan or your favorite cheese. Add about 4 ounces shredded cheese and top with a bit more. Bake at 350°F for 20 minutes or until the cheese is bubbly and the dip is heated through.
  • Bring the heat by added a splash of hot sauce or some diced jalapeños to this dip.
  • If your dip is too thick, you can thin it out with a bit of milk or cream. If it’s too thin, adding more cream cheese can help thicken it.

Frequently Asked Questions

Can I use fresh corn in this recipe?

Absolutely! Canned, fresh or frozen corn works perfectly well in this recipe for corn dip. If using canned, make sure to drain it well. If you plan on using fresh corn, you can just it straight from the cob or grill the corn and then add to the dip. Using frozen? Thaw and then pat away any extra moisture.

What are some good dippers for this dip?

Any chips work great but we particularly love Frito Scoops or tortilla chips because they’re a bit heartier and can hold up to the chunkiness of this dip. Other options would be veggie sticks (cucumber, celery, carrots, etc.), crackers or pita chips.

Can this dip be made ahead of time?

Yes, and I recommend it! Chilling this dip gives it time for the flavors to melt. Store, covered, in the refrigerator until ready to serve.
